In celebration of National Corn Fritters Day (without a doubt, one of our favorite national days), here’s a recipe from one of our best-known restaurants on the Space Coast. Dixie Crossroads has been serving these hot and delicious corn fritters for more than 30 years.

Cooking hint: If you can’t get the recipe quite right, you could always go to Dixie Crossroads for a bit of field research. We always find a reason to go to Dixie Crossroads. Sometimes it’s “lunch,” or “Sunday.” Or “we haven’t been in a few days and we want rock shrimp!”

Dixie Crossroads Corn Fritters

2 Cups flour

2 eggs – beaten

1 Tbsp. baking powder

1 cup milk

½ Tsp. salt

4 Tbsp. melted butter

4 Tbsp. sugar

1 cup whole corn – drained

Powdered sugar

Heat the cooking oil to approximately 350 degrees F.  Sift the flour, baking powder, salt and sugar together.  Combine eggs, milk, and butter.  Fold the egg mixture into dry ingredients.  Add corn last.  Drop by tablespoon into hot oil – deep-fry about 5 minutes, turning periodically – or until they are golden brown.  Pull them out of the oil and drain. Sprinkle with powdered sugar and serve while warm.
